Halloween Pumpkin Mousse

Well, Halloween is just around the corner and since I’m not a big fan of spookiness I rather use the season’s fruits/vegetables to create a delish-dish. I’m also a lazy girl who look for shortcuts and easy recipes, so my thinking around this was “What can go wrong with pumpkin puree and heavy cream”, right?
Are you ready? I’m! so lets get cooking 🙂
Ingredients:
1. One cup pumpkin puree
2. Half a cup dark brown sugar
3. Half a teaspoon cinnamon
4. A pinch ground nutmeg
5. A pinch ground cloves
6. One cup heavy cream
7. Eight Ginger Snap cookies
Step By Step:
1. Mix together pumpkin puree, sugar, cinnamon, nutmeg and cloves
2. Whip the cream
3. Mix half of the pumpkin mixture with the heavy cream. add the other half and mix again
4. Crash the Ginger Snaps
5. Put the dish together
Recipe tips:
If you’re not a big fan of ginger snaps, use cinnamon grahams instead.

Chocolate Swirl Pancakes

Pancakes, chocolate. chocolate, pancakes. why is it the two words are going so well together?
Well, after my son kept nagging me for more than a month to make him some chocolate-pancakes, I came up with this idea. I just felt that chocolate chips would be too boring. yep, I’m getting bored very easily, can’t and don’t want to change it.
I decided to call my best friend Nutella to join me. guess what? she said yes.
She’s here, you’re here, so lets get cooking 🙂
Ingredients:
1. One cup flour
2. half a cup almond mill
3. Two teaspoons baking powder
4. Three spoons sugar
5. Two spoons oil
6. One cup almond milk
7. Two eggs
Step By Step:
1. Mix dry ingredients (flour, almond mill, baking powder and sugar)
2. Mix wet ingredients in a separate bowl (oil, almond milk, eggs)
3. Combine wet and dry ingredients – pour the wet ingredients over the dry ingredients and mix.
4. Add two spoons of Nultela
5. Mix the Nutella just until stripes are showing. Don’t over mix.
6. Scoop the batter and pour over a hot pan.
7. Cook for about 2 minutes.
8. Flip the pancakes and cook for two more minutes.
Recipe tips:
After adding the Nutella, mix slowly creating 8 shape movements.

Why are we using sugar?
1. For a sweet flavor
2. For a nice golden-brown color
Make one batch of pancakes leaving the sugar out. How does the pancakes looks like compare to the sugar batch? Does it have the same color? which batch is darker and which lighter? does it taste the same?

Hummus Is Good For You or What Inside Your sandwich? part 3

I know you didn’t ask, but I just have to answer: hummus is one of my favorites, it’s a comfort foods.
For you it might be mac & cheese or even grandma’s soup, but for me its hummus; warm, creamy, reach and savory.
It’s not that hard to make, actually it’s pretty basic so lets get cooking 🙂
Ingredients:
1. One and a half cups of cooked garbanzo beans (you can use canned beans but it’s not the same, sorry to be the party pooper here)
2. Half a cup olive oil (EVOO said Rachel)
3. Fresh lemon juice from half a lemon
4. One cup Tahini paste (sesame seeds paste)
5. Quarter of a teaspoon salt
6. A pinch of cumin and a pinch of ground pepper
7. up to 1/4 cup water
No garlic is needed, it’s a myth!
Step By Step
1. place all ingredients, except the Tahini paste , in the food processor bowl
2. Mash together for about one minute
3. Add Tahini paste and keep mashing until smooth. Add water if needed.
ParenTIP:
Look in your pantry, or go to the supermarket with your child to find different kinds of beans. Glue each one of them on a paper and write down their characteristics; name, color, size, shape etc.
Cool fact
Garbanzo Beans or chickpeas are the most widely consumed legume in the world.
The word “hummus” came from Arabic. Hummus simply means garbanzo beans.
Not every spread made from beans can be described as hummus.

Avocado Salad or What Do You Want Inside Your sandwich? part 2

Yes, I’m still looking for the ultimate answer for the big question: “What do you want inside your sandwich today”?
I don’t know about you guys, but I have 3 kids to feed. 3 kids a day X 5 lunches a week = 15 sandwiches every week
15!
I have to admit that I’m getting a little tired of being creative around that subject.

Ingredients:
1. Half an avocado (It has to be ripe or it won’t taste as good)
2. Two spoons egg salad
3. A squeeze of lemon juice
4. A pinch of salt
Step By Step:
1. Scoop the avocado pulp, place in a bowl and mash with a fork
2. Add the lemons squeeze, salt and egg salad and mix
3. Spread over a piece of bread

Why do we use lemon juice in this recipe? to prevent the avocado from turning brown or oxidizing
Cut the other half of the avocado in half (resulting in 2 quarters). Mash each quarter in a separate bowl and mark them 1 and 2.
Add 1 teaspoon of lemon juice to the first bowl and mix.
Leave both bowls at room temperature for about half an hour – what happened to the avocados?
The avocado in the first bowl remained green while the avocado in the second bowl turned brown and black; the acid in the lemon juice prevented the oxidation process which turned the avocado’s color black.

Ingredients:
1. Six eggs
2. Two spoons light mayonnaise
No salt is needed, take my word for it!
Step By Step:
1. Put the eggs in a pot and cover with water. Bring to a boil and let it cook for 15 minutes
2. Take the pot off the stove, pour the hot water and rinse with cold water.
3. Peel the eggs
4. Mash the eggs with a fork
5. Add the mayonnaise and mix
6. Spread over a piece of bread

To demonstrate the coagulation process crack a fresh egg and compare it to the hard boiled egg: Are the colors any different? touch the egg and feel it, is the texture the same? – is it soft / hard / wet / dry?
Explain that the heat (hot water in this case)Â hardened the egg’s interior. or in other words the egg coagulated.

Applesauce Pancakes or “Happy New Year” Pancakes

Rosh Hashana (The Jewish new year) is just around the corner. Dipping an apple in honey is a traditional costume which symbolize our hopes for a sweet new year. I thought it would be nice to hide the apple inside a pancake and drizzle honey on top of it.
So lets get cooking 🙂
Ingredients:
1. One cup white whole wheat
2. Two teaspoons baking powder
3. Two spoons sugar
4. Two eggs
5. Half a cup unsweetened applesauce
6. Two spoons vegetable oil
7. Half a cup milk
8. Honey
Step By Step:
1. Mix together the dry ingredients – flour, baking powder and sugar
2. Combine the wet ingredients- applesauce, oil, milk and eggs
3. Pour wet ingredients over dry ingredients and mix.
4. Use ice cream scoop to scoop the batter over the pan and cook for two minutes
5. Flip and cook for two more minutes
6. Serve with a drizzle of honey
Recipe tips:
Adding an applesauce to the batter is a great way to add moisture, as well as vitamins. Make your own applesauce by cooking apples and mashing them. no extra sugar is needed

Chicken Quesadilla with Home Made Ketchup

last week Adam & Maya celebrated their 5th birthday. Adam doesn’t like pizza, so after consulting with his mom I decided to teach them how to make home-made ketchup and use it as a “sauce”. It was a great success.
So lets get cooking 🙂
Ingredients:
1. Whole wheat tortilla
2. Shredded cheddar cheese
3. Sliced chicken breast
1 can tomato paste
1 spoon apple cider vinigar
2 spoons dark brown sugar
1 teaspoon onion powder
1 teaspoon salt
a pinch of ground black pepper
1/2 teaspoon garlic powder
1/2 cup water
Step By Step:
1. Mix all the ketchup ingredients
2. Spread 1 spoon of ketchup over a tortilla
3. Place the chicken breast slices
4. Sprinkle with cheese
5. Fold
6. Crisp 1st side over a hot pan for 2 minutes, flip and crisp the other side
7. Cut & serve
Recipe tips:
When having rotisserie for dinner use the left overs to make this recipe.

Pizza Quesadilla

Ingredients:
Whole wheat tortillas
Shredded mozzarella cheese
For the tomato sauce:
1 can tomato paste
1/2 teaspoon ground black pepper (or less if you want)
1 spoon dry oregano
1 teaspoon salt
1 clove of garlic, minced
1 cup of water
Step By Step:
1. mix tomato paste, black pepper, oregano, salt, garlic and water
2. Spread tomato sauce over half of the tortilla
3. Sprinkle with shredded mozzarella cheese and fold
4. crisp each side for 2 minutes over a hot pan
Recipe tips:
ParenTIP:Â SMELL the ingredients: Garlic & Oregano have a distinctive odor.
Talk with your young ones about the importance of choosing a WHOLE WHEAT bread over white bread

Ingredients:
14 Graham crackers
5 spoons cocoa powder
10 spoons suagr
6 spoons milk
1 butter stick
1 teaspoon vanilla extract
sprinkles / coconut flakes
Step by Step:
1. Break Graham crackers into small pieces
2. Mix together the Graham crackers, cocoa powder, sugar milk, vanilla extract and butter.
3. Shape the butter into balls and coat with sprinkles or coconut flakes
4. Refrigerate for one hour.
5. Eat
Recipe Tips:
Kids Cool Trick – After washing your hands, use them to mix, pour and shape. They are the best tool in you’re disposal.
 ParenTIP: Practice counting with your young ones of the exact quantity of each ingredient.
Counting is the basis of math. This skill is required when solving advanced math problems in school.
